About the dish

What is motsunabe?

Motsunabe (もつ鍋) is the soul food of Fukuoka, in the south of Japan. It is a hot pot of beef offal (mainly small intestine) simmered at your table with cabbage, garlic chives, tofu, garlic and chili.

The offal is soft, rich and a little sweet, with a texture closer to pork belly than to liver. The broth soaks up the fat and the vegetables, and the finishing noodles or rice porridge at the end are the best part for many regulars.

Harimaya uses fresh, never-frozen wagyu beef offal, and offers two broths. Miso is our signature: a secret-recipe miso broth, rich and comforting. Soy sauce is lighter and clear, built on flying-fish dashi from Nagasaki and a blend of soy sauces. A limited spicy mala broth with mushrooms is also available in season.

How to eat

Five easy steps.

1

Order one set per person

Choose miso or soy sauce. One serving (¥2,000) includes offal, vegetables, tofu and broth. Two servings per table is the usual minimum. Everyone at the table shares one pot.

2

Let it simmer

The staff brings the pot to your table on a burner and tells you when it is ready. Do not stir too early. The cabbage sinks, the chives soften, and the broth starts to bubble.

3

Eat from the pot

Use the ladle to serve into your small bowl. Try the broth first. Order small dishes (tsumami) and drinks while you wait.

4

Add more

Extra offal (¥1,450), vegetables (¥780), tofu (¥500) or broth (¥450) can be added at any time. Toppings such as egg, cheese, green onion or mentaiko go in whenever you like.

5

Finish with noodles or rice

When the offal is gone, order the finish (shime): champon noodles (¥600) cooked in the leftover broth, or rice porridge (zosui) with egg, cheese or grated yam (¥780–800). Do not skip this.
